Dimora dei Borgia Restaurant is open for lunch and dinner not only for the hotel guests, but also for external customers. 

Here you can taste typical dishes of Subiaco and surrounding areas. Our chef’s cuisine is a mix of tradition and innovation. The dishes are prepared with seasonal products that we take from our garden or buy from local shops. 

Our menù changes depending on the seasons and on the products available.
